Ingredients

Scale
  • 1 cup cooked quinoa
  • 1 cup dark chocolate (70% cacao or higher)
  • 2 tbsp coconut oil
  • 2 tbsp sugar (adjust to taste)
  • 1/4 tsp sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine dark chocolate and coconut oil. Heat in 30-second intervals until melted and smooth, stirring well.
  3. In a mixing bowl, mix the cooked quinoa, melted chocolate mixture, sugar, and sea salt until the quinoa is fully coated.
  4. Spoon small dollops of the mixture onto the prepared baking sheet and flatten slightly with the back of a spoon.
  5. Bake for 12-15 minutes or until firm and slightly crispy at the edges. Monitor closely to avoid burning.
  6. Cool on the baking sheet for five minutes before transferring to a wire rack to cool completely.
