Description

Cucumber dip is the perfect summer snack, combining crisp cucumbers with creamy Greek yogurt and a zesty kick of garlic and lemon.


Ingredients

Scale
  • 1 ½ cups fresh cucumbers, chopped
  • 1 cup plain Greek yogurt
  • 2 garlic cloves, minced
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp fresh dill weed (or 1 tsp dried dill)
  • ½ tsp salt (to taste)
  • ¼ tsp black pepper (to taste)

Instructions

  1. Wash and slice cucumbers in half lengthwise; scoop out seeds if needed.
  2. Chop cucumbers into small chunks and place in a food processor with Greek yogurt, minced garlic, lemon juice, dill, salt, and pepper.
  3. Blend until smooth yet slightly chunky for texture.
  4. Taste and adjust seasonings as desired.
  5. Transfer to a bowl, cover with plastic wrap, and chill in the fridge for at least one hour.
  6. Serve with pita chips or fresh veggies.
