Cucumber dip is the perfect summer snack, combining crisp cucumbers with creamy Greek yogurt and a zesty kick of garlic and lemon.
Ingredients

- 1 ½ cups fresh cucumbers, chopped
- 1 cup plain Greek yogurt
- 2 garlic cloves, minced
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp fresh dill weed (or 1 tsp dried dill)
- ½ tsp salt (to taste)
- ¼ tsp black pepper (to taste)
Instructions
- Wash and slice cucumbers in half lengthwise; scoop out seeds if needed.
- Chop cucumbers into small chunks and place in a food processor with Greek yogurt, minced garlic, lemon juice, dill, salt, and pepper.
- Blend until smooth yet slightly chunky for texture.
- Taste and adjust seasonings as desired.
- Transfer to a bowl, cover with plastic wrap, and chill in the fridge for at least one hour.
- Serve with pita chips or fresh veggies.
