- 4 medium Yukon Gold potatoes, cut into chunks

- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Prepare your ingredients by chopping onions, mincing garlic, and cutting carrots and potatoes.
- Heat oil in a skillet over medium-high heat. Sear the beef chuck roast on all sides until browned, about 3 minutes per side.
- In the crockpot, layer half the onions at the bottom. Place the seared roast on top and sprinkle with minced garlic. Add carrots and potatoes, then top with remaining onions.
- Pour in beef broth until it covers the veggies but does not drown them. Season with thyme, rosemary, salt, and pepper.
