- 3 lbs bone-in beef short ribs
- 1 cup red wine (Cabernet Sauvignon or Merlot)
- 2 cups low-sodium beef broth
- 1 cup chopped onions
- 1 cup chopped carrots
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 4 sprigs fresh thyme
- 2 sprigs fresh rosemary
- Salt and pepper to taste
Instructions
- Preheat oven to 325°F (160°C).
- In a large Dutch oven, heat olive oil over medium-high heat. Season short ribs with salt and pepper, then sear each side until browned (about 4–5 minutes).
- Remove ribs and sauté onions and carrots in the same pot for about 5 minutes; add garlic near the end.
- Stir in tomato paste, cook for another minute, then add red wine and scrape up browned bits. Simmer for 5 minutes.
- Return short ribs to the pot, add beef broth until nearly submerged, and toss in thyme and rosemary.
- Cover and braise in the oven for about 3 hours or until fork-tender.
- Serve topped with sauce; pair with mashed potatoes or crusty bread.
