  • 8 oz thinly sliced sirloin beef
  • 2 onsen eggs (or soft-cooked eggs)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sake
  • 1 tbsp mirin
  • 1 tsp grated ginger
  • 2 green scallions, chopped (for garnish)
  • 1 tbsp toasted sesame seeds (for garnish)
  • 1 tbsp vegetable oil (for cooking)

Instructions

  1. Prepare the onsen eggs by simmering water to about 167°F (75°C). Gently lower room-temperature eggs into the water and cook for 15-20 minutes. Transfer to an ice bath.
  2. In a bowl, mix soy sauce, sake, mirin, and grated ginger. Add the sliced beef and marinate for 10-15 minutes.
  3. Heat oil in a skillet over medium-high heat. Cook the marinated beef in batches, about 2 minutes per side until just pink inside.
  4. Plate the beef attractively and crack open each onsen egg over the top.
  5. Garnish with chopped scallions and sesame seeds. Serve immediately.
