  • 1 cup protein (chicken, tofu, or shrimp)
  • 1 cup mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, chopped (for garnish)
  • 1 tablespoon toasted sesame seeds (for garnish)

Instructions

  1. Rinse jasmine rice under cold water until clear. Cook according to package instructions.
  2. Marinate chicken or shrimp in soy sauce and sesame oil for 15 minutes. For tofu, press and cube before marinating.
  3. Heat a large skillet over medium heat with a splash of sesame oil. Sauté vegetables for about 5 minutes until crisp.
  4. Push veggies aside and add marinated protein to the skillet. Cook until golden brown (about 5 minutes).
  5. Combine everything in the skillet with any leftover marinade; stir for an additional minute.
  6. Serve rice in bowls topped with the sautéed mixture and garnished with green onions and sesame seeds.
