  • 4 large bell peppers (red, yellow, or green)
  • 1 lb ground beef (or turkey/chicken)
  • 1 cup cooked rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 2 tsp Italian seasoning (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cut the tops off each bell pepper and remove seeds.
  3. In a skillet over medium heat, sauté onions until translucent. Add ground meat and cook until browned.
  4. Stir in cooked rice and diced tomatoes; season with salt, pepper, and Italian seasoning. Mix until heated through.
  5. Generously stuff each pepper with the filling mixture.
  6. Place stuffed peppers upright in the baking dish, cover with foil, and bake for 25 minutes. Remove foil, sprinkle cheese on top, and bake an additional 10-15 minutes until bubbly.
