  • 4 small sugar pumpkins
  • 1 lb ground sausage
  • 1 cup cooked quinoa
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 cup shredded mozzarella cheese
  • 2 tbsp fresh basil or parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Cut the tops off the pumpkins and scoop out the seeds; set aside.
  3. In a skillet over medium heat, cook the ground sausage until browned.
  4. In a large bowl, mix the cooked sausage with quinoa, diced onions, minced garlic, shredded cheese, and fresh herbs until well combined.
  5. Stuff each pumpkin with the mixture and place on the baking sheet. Cover with tops.
