  • 3 lbs boneless chuck roast
  • 2 cups fresh pineapple, diced
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • ¼ cup brown sugar

Instructions

  1. Prepare ingredients by chopping the onion, mincing the garlic, and dicing the pineapple.
  2. Create a base by layering the chopped onions at the bottom of the crockpot.
  3. Optionally sear the chuck roast in a skillet over medium heat until browned on all sides to enhance flavor.
  4. Place the roast on top of the onions. In a bowl, mix chipotle peppers, soy sauce, brown sugar, and garlic; pour this mixture over the roast.
  5. Add pineapple pieces on top of everything.
  6. Cover and slow cook on low for 8 hours or high for 4 hours until fork-tender.
