  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1 ripe avocado, diced
  • 1 cup fresh salsa
  • Juice of 2 limes
  • ¼ cup chopped fresh cilantro

Instructions

  1. Preheat grill or skillet to medium-high heat. Season chicken breasts with salt and pepper. Cook for about 6 minutes per side until internal temperature reaches 165°F (75°C). Let rest before slicing.
  2. While chicken rests, wash and chop salad greens. Halve cherry tomatoes and thinly slice red onion.
  3. In a large bowl, combine salad greens, tomatoes, onion, avocado, and sliced chicken.
  4. Drizzle salsa and lime juice over the salad and toss gently to combine.
  5. Garnish with chopped cilantro before serving.
