  • 1 cup green lentils, rinsed
  • 2 tbsp extra virgin olive oil
  • 1 cup hummus (store-bought or homemade)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the chopped carrots in a bowl with olive oil, salt, and pepper until well coated.
  3. Arrange the seasoned carrots on a parchment-lined baking sheet and roast for 20-25 minutes until golden brown.
  4. In a medium saucepan, combine lentils with 3 cups of water; bring to a boil then simmer for 20-25 minutes until tender.
  5. In a large bowl, combine roasted carrots with drained lentils and lemon juice; toss gently.
  6. Serve topped with generous dollops of hummus.
