Description

Ingredients

  • 2 medium beets (about 300g)
  • 1 cup full-fat Greek yogurt (240g)
  • 2 cloves garlic, minced
  • 1 tbsp freshly squeezed lemon juice
  • 1 tbsp extra virgin olive oil
  • 2 tbsp fresh cilantro leaves, chopped
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap beets in aluminum foil and roast for 45-60 minutes until tender.
  2. Allow the beets to cool, then peel off the skins and chop them into cubes.
  3. In a bowl, mix Greek yogurt with minced garlic, lemon juice, and salt until well combined.
  4. On a serving platter, spoon half of the yogurt mixture as a base layer. Arrange the chopped beets on top and drizzle more yogurt over them.
  5. Garnish with cilantro and drizzle with olive oil before serving.
