- 1 cup full-fat Greek yogurt (240g)

- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C). Wrap beets in aluminum foil and roast for 45-60 minutes until tender.
- Allow the beets to cool, then peel off the skins and chop them into cubes.
- In a bowl, mix Greek yogurt with minced garlic, lemon juice, and salt until well combined.
- On a serving platter, spoon half of the yogurt mixture as a base layer. Arrange the chopped beets on top and drizzle more yogurt over them.
- Garnish with cilantro and drizzle with olive oil before serving.
