Ingredients
  

Pancake Batter
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp butter, melted
Toppings
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup whipped cream for serving
  • 1 tbsp maple syrup optional

Method
 

Prepare Pancake Batter
  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, egg, and melted butter. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Cook Pancakes
  1. Preheat a griddle or frying pan over medium heat and lightly grease it.
  2. Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  3. Repeat with the remaining batter.
Serve
  1. Stack pancakes on plates and top with sliced strawberries, blueberries, and whipped cream.
  2. Drizzle with maple syrup if desired.

Notes

For a fun twist, add food coloring to the batter to create red and blue pancakes.
