  • 1 cup rolled oats
  • 1/2 cup peanut butter or almond butter
  • 1/3 cup honey
  • 1/2 cup chocolate chips optional
  • 1/2 cup dried fruit raisins or cranberries
  • 1/4 cup chia seeds
Veggie Sticks with Hummus
  • 2 carrots carrots cut into sticks
  • 1 cucumber cucumber cut into sticks
  • 1 bell pepper bell pepper cut into sticks
  • 1 cup hummus for dipping
Cheese and Crackers
  • 8 oz cheddar cheese sliced
  • 1 box whole grain crackers

Method
 

Prepare Energy Bites
  1. In a mixing bowl, combine rolled oats, peanut butter, honey, chocolate chips, dried fruit, and chia seeds. Mix until well combined.
  2. Roll the mixture into small balls and place them on a serving platter.
Prepare Veggie Sticks
  1. Cut carrots, cucumber, and bell pepper into sticks and arrange them on a platter.
  2. Serve with hummus in a small bowl for dipping.
Assemble Cheese and Crackers
  1. Slice cheddar cheese and arrange it on a platter with whole grain crackers.
