Ingredients
  

Shortbread Base
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour sifted
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
Apricot Filling
  • 1 cup apricot preserves
  • 1 tablespoon lemon juice

Method
 

Prepare the Shortbread Base
  1. Preheat the oven to 350°F (175°C). Grease and line the baking pan with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the vanilla extract and mix well.
  4. Gradually add the sifted flour and salt, mixing until just combined.
  5. Press two-thirds of the dough into the bottom of the prepared baking pan to form the base.
Add the Filling and Bake
  1. In a small bowl, mix the apricot preserves with lemon juice until smooth.
  2. Spread the apricot filling evenly over the shortbread base.
  3. Crumble the remaining dough over the apricot filling.
  4. Bake in the preheated oven for 25-30 minutes, or until the top is lightly golden.
  5. Allow to cool in the pan before cutting into bars.

Notes

For an extra touch, dust the bars with powdered sugar before serving.
