Ingredients
  

Vegetables
  • 4 cups green cabbage, shredded
  • 1 cup carrots, shredded
  • 1 cup red bell pepper, thinly sliced
  • 1/2 cup green onions, chopped
Dressing
  • 3 tablespoons soy sauce low sodium recommended
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup for vegan option
  • 1 teaspoon sesame seeds toasted

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded cabbage, carrots, red bell pepper, and green onions.
Make the Dressing
  1. In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, and sesame seeds until well combined.
Combine and Serve
  1. Pour the dressing over the vegetable mixture and toss until everything is evenly coated. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

Notes

This slaw can be made a few hours in advance. Just keep it refrigerated until serving to maintain its crunchiness.
