  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
Dressing Ingredients
  • 3 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 clove garlic minced
  • 1/2 teaspoon red pepper flakes optional

Method
 

Prepare the Vegetables
  1. In a mixing bowl, combine the sliced cucumbers, julienned carrots, sliced red onion, and chopped cilantro.
Make the Dressing
  1. In a separate bowl, whisk together the rice vinegar, sesame oil, soy sauce, sugar, minced garlic, and red pepper flakes until well combined.
Combine and Serve
  1. Pour the dressing over the vegetable mixture and toss to coat evenly. Serve immediately or refrigerate for 30 minutes to enhance flavors.

Notes

This salad can be made ahead of time and stored in the refrigerator for up to 2 days. The flavors will deepen as it sits.
