Ingredients
  

Gnocchi
  • 1 pound potato gnocchi store-bought or homemade
Vegetables
  • 1 cup asparagus trimmed and cut into 1-inch pieces
  • 1 cup fresh peas or frozen peas
Sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 lemon zest
  • 2 tablespoons lemon juice freshly squeezed
  • 1/2 cup parmesan cheese grated

Method
 

Prepare the Gnocchi
  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the top. Drain and set aside.
Cook the Vegetables
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add asparagus and cook for about 3-4 minutes until tender. Stir in the peas and cook for an additional 2 minutes.
Combine and Serve
  1. Add the cooked gnocchi to the skillet with the vegetables. Stir in lemon zest, lemon juice, and grated parmesan. Season with salt and black pepper to taste. Toss gently to combine.
  2. Serve immediately, garnished with additional parmesan if desired.

Notes

For a vegetarian option, ensure the parmesan cheese is rennet-free.
