  • 1 pound Asparagus Tender and vibrant, choose firm stalks.
  • 8 ounces Mushrooms Opt for cremini or shiitake for deeper flavor.
  • 1 Bell Pepper Any color for added sweetness.
  • 2 cloves Garlic Freshly minced for an aromatic kick.
  • 2 tablespoons Soy Sauce Consider low-sodium if preferred.
  • 1 tablespoon Sesame Oil Adds a nutty aroma.
For Serving
  • 2 cups Cooked Rice or Quinoa Use brown rice for added nutrition or quinoa for gluten-free.
  • 2 Green Onions Sliced thin for garnish.

Method
 

Preparation
  1. Rinse and trim 1 pound of fresh asparagus, cutting them into 2-inch pieces. Slice 8 ounces of mushrooms.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  3. Add the asparagus pieces to the hot skillet and stir-fry for about 3-4 minutes until bright green and tender-crisp.
  4. Toss in the sliced mushrooms and continue to stir-fry for another 4-5 minutes.
  5. Sprinkle in salt, pepper, and about 2 tablespoons of soy sauce or tamari. Stir well.
  6. Cook for an additional 2-3 minutes until everything is heated through.

Notes

Garnish with sesame seeds or fresh herbs for extra flavor.
