Ingredients
  

For the Sauté
  • 8 cups fresh spinach can use frozen if fresh isn’t available
  • 8 ounces mushrooms choose your favorite variety, such as cremini or shiitake
  • 2 tablespoons olive oil for sautéing
  • 1 clove garlic minced
For the Glaze
  • 2 tablespoons balsamic vinegar the star of this dish
  • 1 tablespoon honey can substitute with maple syrup for a vegan option
  • salt to taste
  • pepper to taste
For Serving (optional)
  • grated Parmesan cheese omit for a dairy-free version
  • chopped walnuts or pine nuts for added crunch

Method
 

Preparation
  1. Wash and dry 8 cups of fresh spinach and slice 8 ounces of mushrooms.
Cooking
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.
  2. Add the sliced mushrooms to the skillet and cook for about 5-7 minutes until tender and golden brown.
  3. Toss in the fresh spinach, stirring gently until it wilts down, about 2-3 minutes.
  4. Drizzle 2 tablespoons of balsamic vinegar over the sautéed vegetables, stirring well to combine, and let it simmer for an additional minute.
  5. Sprinkle with salt and pepper to taste, adjusting according to preference.
  6. Optional: Top with freshly grated Parmesan cheese before serving.
