Prepare the Filling

Mix Seasonings
- Stir in your favorite taco seasoning, adding water as directed on the package. Simmer for about 5 minutes until the mixture thickens and is fragrant.
Warm Tortillas
- In another skillet, warm corn tortillas over medium heat for about 30 seconds on each side until they’re pliable.
Fill Tortillas
- Spoon a generous amount of the beef mixture onto each tortilla, then sprinkle with cheese. Roll them tightly and place seam-side down in a greased baking dish.
Make the Sauce
- In a bowl, combine enchilada sauce with diced green chiles and a pinch of cumin. Mix well.
Top Enchiladas
- Pour the sauce evenly over the rolled enchiladas and sprinkle additional cheese on top.
Bake
- Place the baking dish in a preheated oven at 350°F for about 20 minutes, or until the cheese is melted and bubbling.
