Ingredients
  

For the Beef Filling
  • 1 pound ground beef can substitute with ground turkey or chicken
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tablespoon chili powder adjust to spice preference
For the Sauce
  • 1 can enchilada sauce store-bought or homemade
  • 2 tablespoons tomato paste
For Assembly
  • 8 pieces corn tortillas or flour tortillas
  • 2 cups shredded cheese like cheddar or Monterey Jack
  • 1 cup sour cream for topping
For Garnish
  • 1/4 cup chopped cilantro optional
  • 1/4 cup sliced jalapeños optional

Method
 

Prepare the Filling
  1. In a large skillet, brown the ground beef over medium heat until no longer pink. Drain excess fat, then stir in diced onions, garlic, and spices until fragrant.
Mix the Sauce
  1. In a separate bowl, combine the enchilada sauce with a dash of cumin and chili powder for extra flavor.
Assemble the Enchiladas
  1. Take a tortilla and add a generous scoop of your beef mixture down the center. Roll it up tightly and place seam-side down in a greased baking dish. Repeat for all tortillas.
Add Sauce and Cheese
  1. Pour the remaining enchilada sauce evenly over the rolled tortillas, then sprinkle shredded cheese generously on top.
Bake to Perfection
  1. Preheat your oven to 350°F and bake the enchiladas for about 20 minutes, or until the cheese is bubbly and golden brown.
Garnish and Serve
  1. Remove from the oven and let cool for a few minutes. Top with fresh cilantro or chopped green onions.
