Ingredients
  

Cake
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup milk room temperature
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
Topping
  • 2 cups heavy whipping cream chilled
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 1 cup raspberries

Method
 

Cake Preparation
  1. Preheat the oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Add softened butter, milk, eggs, and vanilla extract. Beat with an electric mixer on medium speed until smooth and well combined, about 2 minutes.
  4. Pour the batter into the prepared baking pan and spread evenly.
  5. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely.
Topping Preparation
  1. In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  2. Once the cake is cooled, spread the whipped cream evenly over the top.
  3. Arrange the strawberries in rows to form the stripes of the flag and place blueberries in the top left corner to represent the stars.
  4. Chill the cake for at least 30 minutes before serving.
