Birria Tacos (Dipping Tacos)

Delicious and flavorful tacos filled with tender, spiced meat, served with a rich broth for dipping.

Ingredients
  

Meat
  • 2 lbs beef chuck roast cut into chunks
  • 1 lb lamb shank optional for added flavor
Spices
  • 3 tbsp dried guajillo chiles stems and seeds removed
  • 2 tbsp dried ancho chiles stems and seeds removed
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 1 tbsp black pepper
  • 1 tsp cinnamon
  • 4 cloves garlic minced
  • 1 tsp salt to taste
Broth
  • 6 cups beef broth
  • 1 cup water
  • 1 small onion chopped
Tacos
  • 12 pcs corn tortillas for serving
  • 1 cup chopped cilantro for garnish
  • 1 cup diced onion for garnish
  • 1 cup lime wedges for serving

Method
 

Prepare the Meat
  1. In a large Dutch oven, combine beef chuck roast, lamb shank, and enough water to cover the meat. Bring to a boil, then reduce heat and simmer for 2 hours until tender.
  2. Remove meat, shred it, and set aside. Reserve the broth.
Make the Sauce
  1. In a skillet, toast the guajillo and ancho chiles until fragrant. Soak in hot water for 15 minutes.
  2. Blend soaked chiles with garlic, cumin, oregano, black pepper, cinnamon, and a cup of reserved broth until smooth.
  3. Combine the blended sauce with the reserved broth in the Dutch oven. Add shredded meat, onion, bay leaves, and salt. Simmer for 1 hour.
Assemble Tacos
  1. Heat corn tortillas on a skillet until warm. Fill each tortilla with shredded meat and top with cilantro and onion.
  2. Serve with a bowl of the broth for dipping and lime wedges on the side.

Notes

Birria tacos are best enjoyed fresh and can be customized with your favorite toppings.
