Ingredients
  

Main Ingredients
  • 4 large eggs beaten
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 4 large flour tortillas
  • 1 cup cooked breakfast sausage crumbled
  • 1 cup bell peppers diced
  • 1 cup onion diced
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Cooking the Filling
  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and bell peppers, and sauté until softened, about 5 minutes.
  2. Add the crumbled sausage to the skillet and cook until heated through. Season with salt and pepper.
  3. In a mixing bowl, whisk the beaten eggs and pour them into the skillet. Scramble until fully cooked.
Assembling the Quesadillas
  1. Place a tortilla in a clean skillet over medium heat. Sprinkle half of the shredded cheese on one half of the tortilla.
  2. Spoon some of the egg and sausage mixture over the cheese, then fold the tortilla in half.
  3. Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with remaining ingredients.
Serving
  1. Cut the quesadillas into wedges and serve hot with salsa or sour cream.
