Ingredients
  

Filling
  • 4 large eggs beaten
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1 cup bell pepper diced
  • 1 cup spinach fresh
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Quesadillas
  • 4 large flour tortillas

Method
 

Prepare the Filling
  1. In a skillet, heat olive oil over medium heat. Add diced bell pepper and sauté until softened, about 3 minutes.
  2. Add the beaten eggs, salt, and black pepper. Cook, stirring gently, until the eggs are just set.
  3. Stir in the fresh spinach and cook until wilted, about 1 minute.
Assemble and Cook Quesadillas
  1. Place a tortilla in the skillet over medium heat. Spread a portion of the egg filling on half of the tortilla and sprinkle with shredded cheese.
  2. Fold the tortilla over to cover the filling and cook until golden brown, about 2-3 minutes per side.
  3. Repeat with remaining tortillas and filling.
Serve
  1. Cut quesadillas into wedges and serve warm with salsa or avocado on the side.
