Ingredients
  

Potatoes
  • 2 lbs Yukon Gold potatoes peeled and diced
Vegetables
  • 1 cup celery finely chopped
  • 1 cup red bell pepper finely chopped
  • 1/2 cup green onions sliced
Dressing
  • 1 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp Cajun seasoning
  • 1 tbsp apple cider vinegar
  • 1 tsp hot sauce optional

Method
 

Prepare the Potatoes
  1. Place the diced potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15 minutes. Drain and let cool.
Make the Dressing
  1. In a mixing bowl, whisk together the mayonnaise, Dijon mustard, Cajun seasoning, apple cider vinegar, hot sauce, salt, and black pepper until smooth.
Combine Ingredients
  1. In a large bowl, combine the cooled potatoes, celery, red bell pepper, and green onions. Pour the dressing over the salad and gently mix until everything is well coated.
Chill and Serve
  1. Cover the potato salad and refrigerate for at least 1 hour before serving to allow the flavors to meld.

Notes

For extra flavor, you can add diced pickles or hard-boiled eggs to the salad.
