Ingredients
  

Marinade
  • 2 lbs flank steak or skirt steak
  • 1/4 cup olive oil
  • 1/4 cup lime juice freshly squeezed
  • 4 cloves garlic minced
  • 1 tbsp ground cumin
  • 1 tbsp chili powder
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tbsp fresh cilantro chopped
To Serve
  • 8 small corn tortillas
  • 1 cup pico de gallo
  • 1 cup guacamole
  • 1 cup sour cream

Method
 

Marinate the Steak
  1. In a mixing bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, black pepper, and cilantro to create the marinade.
  2. Place the flank steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 30 minutes, preferably 2 hours.
Grill the Steak
  1. Preheat the grill to medium-high heat.
  2. Remove the steak from the marinade and let excess marinade drip off.
  3. Grill the steak for about 5 minutes on each side for medium-rare, or until desired doneness is reached.
  4. Remove from the grill and let rest for 5 minutes before slicing against the grain.
Serve
  1. Warm the corn tortillas on the grill for about 30 seconds on each side.
  2. Serve the sliced carne asada in tortillas with pico de gallo, guacamole, and sour cream.

Notes

For extra flavor, consider adding jalapeƱos or other spices to the marinade.
