Ingredients
  

Marinade
  • 1 cup olive oil
  • 1/2 cup lime juice
  • 1/4 cup soy sauce
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 1 bunch fresh cilantro chopped
Beef
  • 3 pounds flank steak or skirt steak
Toppings
  • 2 cups diced onions
  • 2 cups chopped fresh cilantro
  • 2 cups sliced radishes
  • 1 cup sour cream
  • 1 cup salsa
  • 12 pieces corn tortillas

Method
 

Marinate the Beef
  1. In a mixing bowl, combine olive oil, lime juice, soy sauce, cumin, chili powder, garlic powder, black pepper, salt, and chopped cilantro. Mix well.
  2. Place the flank steak in a large resealable bag or dish and pour the marinade over it. Seal and refrigerate for at least 2 hours, preferably overnight.
Grill the Beef
  1. Preheat the grill to high heat.
  2. Remove the steak from the marinade and let excess marinade drip off. Discard the marinade.
  3. Grill the steak for about 5-7 minutes per side, or until it reaches your desired doneness (medium rare is about 130°F).
  4. Remove from the grill and let rest for 10 minutes before slicing.
Serve
  1. Slice the beef against the grain into thin strips.
  2. Serve with corn tortillas and toppings such as diced onions, cilantro, radishes, sour cream, and salsa.

Notes

For best flavor, marinate the beef overnight. Adjust the spice level by adding more chili powder or jalapeños to the marinade.
