Method
Prepare the Crust
- In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
- Divide the mixture evenly among serving cups and press down firmly to form the crust.
Make the Filling
- In a separate bowl, beat the softened cream cheese with an electric mixer until smooth.
- Add granulated sugar and vanilla extract, and mix until well combined.
- In another bowl, whip the cold heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Assemble the Cups
- Spoon the cheesecake filling over the crust in each cup, smoothing the top.
- Cover and refrigerate for at least 2 hours to set.
Serve
- Before serving, top with fresh berries and a dusting of powdered sugar if desired.
Notes
These cheesecake cups can be made a day in advance and stored in the refrigerator until ready to serve.
