Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 5 tablespoons unsalted butter melted
Filling
  • 8 ounces cream cheese softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream cold
Topping
  • 1/2 cup fresh berries for garnish
  • 2 tablespoons powdered sugar optional

Method
 

Prepare the Crust
  1. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
  2. Divide the mixture evenly among serving cups and press down firmly to form the crust.
Make the Filling
  1. In a separate bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Add granulated sugar and vanilla extract, and mix until well combined.
  3. In another bowl, whip the cold heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Assemble the Cups
  1. Spoon the cheesecake filling over the crust in each cup, smoothing the top.
  2. Cover and refrigerate for at least 2 hours to set.
Serve
  1. Before serving, top with fresh berries and a dusting of powdered sugar if desired.

Notes

These cheesecake cups can be made a day in advance and stored in the refrigerator until ready to serve.
