Ingredients
  

For the Potatoes
  • 4 medium Russet potatoes peeled and sliced thinly
  • 1 medium Yellow onion sliced
For the Cheese Sauce
  • 2 cups Sharp cheddar cheese shredded
  • 1 cup Gruyère cheese shredded
  • 2 cups Heavy cream
For Seasoning
  • 1 teaspoon Garlic powder
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. Prepare the potatoes by peeling and slicing them thinly, about 1/8-inch thick.
  3. Melt butter in a saucepan over medium heat. Add flour, whisking continuously for about 2 minutes until it forms a smooth paste.
  4. Pour in milk gradually while stirring, cooking until the mixture bubbles and thickens, about 5-7 minutes.
  5. Stir in shredded cheese of your choice until melted and smooth.
  6. Layer half of the sliced potatoes in a greased baking dish, then pour half of the cheese sauce over them. Repeat with the remaining potatoes and sauce.
  7. Cover the dish with aluminum foil and bake for 45 minutes.
  8. Uncover and bake for an additional 15-20 minutes until bubbly and golden brown on top.

Notes

Optional: Sprinkle fresh herbs like parsley or chives before serving for a pop of color.
