Ingredients
  

Pie Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 cup ice water more if needed
Filling
  • 2 cups fresh cherries pitted and halved
  • 1 cup fresh blueberries
  • 3/4 cup granulated sugar adjust to taste
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt

Method
 

Prepare the Pie Crust
  1. In a mixing bowl, combine flour, sugar, and salt. Add cold butter and mix until crumbly.
  2. Gradually add ice water until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
Make the Filling
  1. In a large bowl, combine cherries, blueberries, sugar, cornstarch, vanilla, lemon juice, and salt. Mix gently to combine.
Assemble the Pie
  1. Preheat the oven to 375°F (190°C). Roll out the pie crust on a floured surface and fit it into the pie dish.
  2. Pour the filling into the crust, spreading it evenly. Roll out the second crust and place it over the filling. Seal and cut slits for steam.
Bake the Pie
  1. Bake in the preheated oven for 45 minutes or until the crust is golden and the filling is bubbling.
  2. Allow to cool before serving to let the filling set.

Notes

Serve with whipped cream or vanilla ice cream for an extra treat.
