Ingredients
  

Pork Tenderloin
  • 1 lb pork tenderloin trimmed
Cherry Balsamic Glaze
  • 1 cup fresh cherries pitted and halved
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
Garnish
  • 2 tbsp fresh parsley chopped

Method
 

Prepare the Glaze
  1. In a saucepan, combine cherries, balsamic vinegar, honey, olive oil, garlic, salt, and pepper. Bring to a simmer over medium heat and cook for about 10 minutes until the cherries soften and the mixture thickens slightly.
Cook the Pork
  1. Preheat the oven to 400°F (200°C). Season the pork tenderloin with salt and pepper. Heat a skillet over medium-high heat and sear the pork on all sides until browned, about 5 minutes.
  2. Transfer the seared pork to a baking dish and brush generously with the cherry balsamic glaze. Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
Serve
  1. Remove the pork from the oven and let it rest for 5 minutes before slicing. Drizzle with additional glaze and garnish with chopped parsley before serving.

Notes

For a sweeter glaze, add more honey to taste. Serve with roasted vegetables or mashed potatoes for a complete meal.
