Ingredients
  

Custard Base
  • 3 large eggs
  • 1 cup milk whole or almond milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup almond flour
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
Filling
  • 2 cups fresh cherries pitted and halved
Topping
  • powdered sugar for dusting

Method
 

Prepare the Oven and Dish
  1. Preheat the oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.
Make the Custard
  1. In a mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, almond flour, all-purpose flour, and salt until smooth.
Assemble the Clafoutis
  1. Pour half of the custard mixture into the prepared baking dish. Arrange the halved cherries evenly over the custard, then pour the remaining custard over the cherries.
Bake
  1. Bake in the preheated oven for 40-45 minutes, or until the custard is set and lightly golden on top.
Serve
  1. Allow to cool slightly, then dust with powdered sugar before serving.

Notes

Clafoutis can be served warm or at room temperature. For a twist, try using different fruits like blueberries or peaches.
