Ingredients
  

For the Chicken
  • 2 pounds boneless, skinless chicken thighs Trim excess fat
  • to taste salt Enhances natural flavors
  • 1 teaspoon ground cumin Adds warm, earthy flavor
  • 1 teaspoon chili powder Use smoked for extra flavor
  • 1 teaspoon garlic powder Infuses aromatic goodness
For the Cooking Liquid
  • 1 cup chicken broth Low-sodium recommended
  • 1/2 cup orange juice Adds bright, citrusy note
  • 1/4 cup lime juice Freshens up the dish
For Serving
  • 8 corn tortillas Soft and pliable
  • 1/2 cup fresh cilantro For garnish
  • 1/2 cup diced onions Adds crunch and sharpness

Method
 

Preparation
  1. Trim any excess fat from the chicken thighs.
  2. In a large bowl, combine spices and toss the chicken thighs until well coated.
  3. Heat oil in a skillet and sear each side of the chicken thighs for 4-5 minutes until golden brown.
Cooking
  1. Transfer seared chicken to a slow cooker, add onions and garlic, pour in orange and lime juice, cover, and cook on low for 6-8 hours.
  2. Once cooked, remove chicken and shred it using two forks.
  3. For added crunch, spread shredded chicken on a baking sheet and broil for 5-7 minutes until crispy edges form.

Notes

Serve with fresh cilantro and lime wedges for extra zing.
