Ingredients
  

Filling
  • 2 cups cooked chicken shredded
  • 1 cup cheddar cheese shredded
  • 1 cup monterey jack cheese shredded
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Quesadilla Assembly
  • 4 large flour tortillas
  • 2 tablespoons olive oil for frying

Method
 

Prepare the Filling
  1. In a bowl, combine the shredded chicken, cheddar cheese, monterey jack cheese, cumin, chili powder, garlic powder, salt, and black pepper. Mix well.
Assemble the Quesadillas
  1. Heat a skillet over medium heat and add 1 tablespoon of olive oil.
  2. Place one tortilla in the skillet, and spread a portion of the chicken filling evenly over half of the tortilla.
  3. Fold the tortilla in half to cover the filling and cook until golden brown, about 3-4 minutes.
  4. Flip the quesadilla and add another tablespoon of olive oil if needed, cooking for an additional 3-4 minutes until crispy.
  5. Remove from skillet and repeat with remaining tortillas and filling.
Serve
  1. Cut the quesadillas into wedges and serve with salsa, sour cream, or guacamole.

Notes

For extra flavor, consider adding diced bell peppers or onions to the filling.
