Method
Prepare the Dough
- In a large mixing bowl, combine the bread flour, whole wheat flour, cocoa powder, and salt.
- Add the active sourdough starter and water, and mix until a shaggy dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Incorporate the chopped dark chocolate and sugar into the dough, kneading until evenly distributed.
- Place the dough in a lightly greased bowl, cover, and let it rise at room temperature for 4-6 hours or until doubled in size.
Shape and Bake
- Once risen, gently deflate the dough and shape it into a loaf.
- Place the loaf in a greased loaf pan and let it rise again for about 1-2 hours.
- Preheat the oven to 220°C (425°F).
- Optional: Sprinkle chocolate chips on top of the loaf before baking.
- Bake for 40-45 minutes, or until the loaf sounds hollow when tapped on the bottom.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For a richer flavor, use high-quality dark chocolate. This loaf is best enjoyed fresh but can be stored in an airtight container for a few days.
