Dough Ingredients
  • 300 g bread flour
  • 100 g whole wheat flour
  • 200 g active sourdough starter at room temperature
  • 200 ml water room temperature
  • 10 g salt
  • 50 g cocoa powder unsweetened
  • 100 g dark chocolate chopped
  • 50 g sugar
Topping
  • 30 g chocolate chips optional

Method
 

Prepare the Dough
  1. In a large mixing bowl, combine the bread flour, whole wheat flour, cocoa powder, and salt.
  2. Add the active sourdough starter and water, and mix until a shaggy dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Incorporate the chopped dark chocolate and sugar into the dough, kneading until evenly distributed.
  5. Place the dough in a lightly greased bowl, cover, and let it rise at room temperature for 4-6 hours or until doubled in size.
Shape and Bake
  1. Once risen, gently deflate the dough and shape it into a loaf.
  2. Place the loaf in a greased loaf pan and let it rise again for about 1-2 hours.
  3. Preheat the oven to 220°C (425°F).
  4. Optional: Sprinkle chocolate chips on top of the loaf before baking.
  5. Bake for 40-45 minutes, or until the loaf sounds hollow when tapped on the bottom.
  6. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a richer flavor, use high-quality dark chocolate. This loaf is best enjoyed fresh but can be stored in an airtight container for a few days.
