Dough Ingredients
  • 500 g bread flour
  • 100 g sourdough starter active and bubbly
  • 350 ml water room temperature
  • 10 g salt
  • 50 g cocoa powder unsweetened
  • 100 g sugar granulated
  • 100 g dark chocolate chopped

Method
 

Prepare the Dough
  1. In a mixing bowl, combine the bread flour, cocoa powder, and salt. Mix well.
  2. In a separate bowl, mix the sourdough starter with water until dissolved.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until a shaggy dough forms.
  4. Knead the dough for about 10 minutes until smooth and elastic.
  5. Incorporate the chopped dark chocolate into the dough, ensuring even distribution.
Fermentation
  1. Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise at room temperature for 4-6 hours, or until doubled in size.
Shape and Second Rise
  1. Once risen, gently deflate the dough and shape it into a loaf.
  2. Place the shaped dough into a greased loaf pan and cover. Let it rise for another 1-2 hours.
Bake the Loaf
  1. Preheat the oven to 220°C (425°F).
  2. Bake the loaf for 30-35 minutes, or until the crust is dark and the loaf sounds hollow when tapped.
  3. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For an extra touch, you can sprinkle some sea salt on top before baking or serve with butter for added richness.
