Method
Prepare the Dough
- In a mixing bowl, combine the bread flour, cocoa powder, and salt. Mix well.
- In a separate bowl, mix the sourdough starter with water until dissolved.
- Gradually add the wet ingredients to the dry ingredients, mixing until a shaggy dough forms.
- Knead the dough for about 10 minutes until smooth and elastic.
- Incorporate the chopped dark chocolate into the dough, ensuring even distribution.
Fermentation
- Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise at room temperature for 4-6 hours, or until doubled in size.
Shape and Second Rise
- Once risen, gently deflate the dough and shape it into a loaf.
- Place the shaped dough into a greased loaf pan and cover. Let it rise for another 1-2 hours.
Bake the Loaf
- Preheat the oven to 220°C (425°F).
- Bake the loaf for 30-35 minutes, or until the crust is dark and the loaf sounds hollow when tapped.
- Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For an extra touch, you can sprinkle some sea salt on top before baking or serve with butter for added richness.
