Ingredients
  

For the Crust
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 1/4 cup sugar
For the Cheesecake Filling
  • 16 oz cream cheese softened
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1 tbsp vanilla extract pure
  • 3 large eggs
For the Churro Topping
  • 1/4 cup cinnamon sugar mixture
  • 2 tbsp butter for brushing

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust by combining crushed graham crackers, melted butter, and a sprinkle of cinnamon in a mixing bowl. Press this mixture firmly into the bottom of a springform pan.
  3. Mix the cheesecake filling by blending cream cheese, sugar, vanilla extract, and eggs until smooth and creamy.
  4. Pour the filling into the prepared crust evenly.
  5. Bake in the preheated oven for 50-60 minutes or until the center is set but slightly wobbly.
  6. Cool at room temperature for at least an hour before transferring to the fridge. Let it chill for at least 4 hours.
  7. In a small bowl, mix sugar and cinnamon together while your cheesecake chills.
  8. Serve your chilled cheesecake slices drizzled with caramel sauce and topped with the cinnamon sugar mixture.

Notes

Optional: Garnish with whipped cream for an extra layer of sweetness.
