Ingredients
  

Chicken Marinade
  • 1 lb boneless, skinless chicken breasts sliced into strips
  • 2 tbsp olive oil for marinating
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
Vegetables
  • 1 medium bell pepper sliced (any color)
  • 1 medium red onion sliced
  • 1 cup mushrooms sliced
To Serve
  • 8 small flour tortillas warmed
  • 1 cup sour cream for topping
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup guacamole for topping
  • 1 cup salsa for topping

Method
 

Marinate Chicken
  1. In a bowl, combine olive oil, lime juice, cumin, chili powder, garlic powder, salt, and black pepper. Add the chicken strips and toss to coat. Let marinate for at least 15 minutes.
Cook Chicken
  1. Heat a skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, or until cooked through and slightly charred. Remove from skillet and set aside.
Cook Vegetables
  1. In the same skillet, add the sliced bell pepper, red onion, and mushrooms. Sauté for about 5 minutes until they are tender and slightly caramelized.
Combine and Serve
  1. Return the chicken to the skillet with the vegetables and toss to combine. Serve immediately on sizzling plates with warm tortillas and toppings.

Notes

For extra flavor, you can add jalapeños or other spices to the marinade.
