For the Batter
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.5 cups unsalted butter softened
  • 3 large eggs
  • 1 cup coconut milk
  • 1 cup shredded coconut
For the Frosting
  • 8 oz cream cheese
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp coconut extract
For Decoration (Optional)
  • 0.5 cups toasted coconut flakes

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients in a large bowl: flour, baking powder, and salt.
  3. Cream the butter and sugar together until light and fluffy, about 3-5 minutes.
  4. Add eggs one at a time, mixing well after each addition.
  5. Combine the wet ingredients: mix coconut milk and vanilla extract, then add to the butter-sugar blend.
  6. Fold the dry ingredients into the wet mixture gently.
  7. Pour the batter into greased cake pans.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool the cakes in the pans for about 10 minutes before transferring them to wire racks.
Frosting
  1. Whisk powdered sugar with coconut milk until smooth.
