Cooking Steps
  1. Heat a tablespoon of oil in a large pot over medium heat. Add chopped onions, garlic, and ginger, stirring until they soften and become fragrant, about 3-5 minutes.
  2. Carefully place your chicken pieces into the pot. Sear them for around 5-7 minutes until they're golden brown on all sides.
  3. Gently pour in your creamy coconut milk along with chicken broth. Stir everything together and bring it to a gentle simmer for about 10 minutes.
  4. Add your rinsed rice to the pot, stirring well to combine. Cover and cook on low heat for about 15-20 minutes until the rice is fluffy.
  5. Once cooked, taste and adjust seasoning with salt and pepper as needed. A splash of lime juice can brighten up those flavors.
  6. Garnish with fresh cilantro or green onions for an extra burst of freshness.
