Ingredients
  

Cookies
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
Ice Cream
  • 2 cups vanilla ice cream softened

Method
 

Prepare Cookies
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow cookies to cool completely on a wire rack.
Assemble Sandwiches
  1. Once cookies are cooled, take one cookie and scoop a generous amount of softened vanilla ice cream onto the flat side.
  2. Top with another cookie, flat side down, and gently press together.
  3. Repeat with remaining cookies and ice cream.
  4. For a firmer sandwich, freeze assembled sandwiches for at least 30 minutes before serving.
