Prepare Cookies
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until smooth.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow cookies to cool completely on a wire rack.
Assemble Sandwiches
- Once cookies are cooled, take one cookie and scoop a generous amount of softened vanilla ice cream onto the flat side.
- Top with another cookie, flat side down, and gently press together.
- Repeat with remaining cookies and ice cream.
- For a firmer sandwich, freeze assembled sandwiches for at least 30 minutes before serving.
