  • 2 cups corn kernels fresh or frozen
  • 1 large avocado diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 medium lime juiced
  • 1 teaspoon olive oil optional

Method
 

Preparation
  1. In a large mixing bowl, combine the corn, diced avocado, halved cherry tomatoes, chopped red onion, and cilantro.
  2. Drizzle with lime juice and olive oil (if using).
  3. Season with salt and pepper to taste.
  4. Gently toss the salad to combine all ingredients without mashing the avocado.
  5. Serve immediately or chill in the refrigerator for 15 minutes before serving.

Notes

This salad is best served fresh but can be stored in the refrigerator for up to 1 day. To prevent the avocado from browning, add lime juice just before serving.
