Cooking Steps
- Pat chicken cutlets completely dry with paper towels. Season both sides with kosher salt and black pepper.
- Set up a 3-step dredging station in shallow bowls: (1) flour seasoned with a pinch of salt; (2) beaten eggs; (3) grated Parmigiano-Reggiano combined with panko breadcrumbs, garlic powder, and Italian seasoning.
- Dredge each cutlet in flour (shaking off excess), dip thoroughly in beaten egg, then press firmly into the parmesan-panko mixture so both sides are generously coated.
- Heat olive oil and butter in a large skillet over medium-high heat until shimmering. Carefully lay cutlets in the hot skillet without overcrowding.
- Pan-sear for 3 to 4 minutes per side until the crust is deep golden brown and the internal temperature reaches 165°F (74°C).
- Transfer cutlets to a warm wire rack, rest 3 minutes, then garnish with fresh parsley, shaved parmesan ribbons, and fresh lemon wedges.
