Ingredients
  

For the Eggs
  • 6 large eggs use fresh eggs for the best flavor and texture
  • 1/4 cup mayonnaise try Greek yogurt for a lighter option
  • 1 tablespoon Dijon mustard adjust to your taste preference
  • to taste salt enhance the overall flavor
  • to taste pepper enhance the overall flavor
For the Decor
  • 1 teaspoon paprika sprinkle on top for color and a hint of smoky flavor
  • 2 tablespoons green onions or chives finely chopped
  • 4 slices olives slice into tiny pieces for eyes

Method
 

Preparation
  1. Start by placing your eggs in a pot and covering them with cold water. Bring the water to a rolling boil, then cover and let sit for 12 minutes.
  2. Once the time is up, transfer the eggs into a bowl of ice water. Let them sit for about 5-10 minutes to cool completely.
  3. Gently crack the cooled eggs on a hard surface and peel them under running water if needed.
  4. Slice each egg in half lengthwise and carefully scoop out the yolks into a mixing bowl.
Filling
  1. Mash the yolks with mayonnaise, mustard, salt, and pepper until creamy and smooth.
  2. Using a piping bag or a ziplock with a corner snipped off, fill each egg white half generously with the yolk mixture.
  3. Use sliced olives for eyes and pieces of carrot or bell pepper for beaks.

Notes

Garnish with fresh herbs for an extra pop of color!
