Preparation
- Preheat your oven to 350°F.
- Cook the chicken in a skillet over medium heat until fully cooked, about 7-10 minutes. Shred the chicken using two forks.
- Mix together the shredded chicken, black beans, and half of the cheese in a large bowl.
- Fill each tortilla with a generous scoop of the chicken mixture, roll them up tightly and place seam-side down in a greased baking dish.
- Pour your favorite enchilada sauce over the rolled tortillas and sprinkle the remaining cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until bubbly and golden brown on top.
Serving
- Garnish with fresh cilantro or sliced avocado if desired.
Notes
Use rotisserie chicken for quick prep and flavor. Warm tortillas before filling to prevent breakage.
