Ingredients
  

For the Potatoes
  • 2 pounds Yukon Gold potatoes these creamy potatoes are perfect for mashing and add a buttery flavor.
  • to taste Salt enhances the natural flavors of the potatoes.
  • 1 cup Milk helps achieve that luscious, smooth consistency.
  • 4 tablespoons Butter adds richness; feel free to use unsalted for better control over seasoning.
For the Greens
  • 1 cup Savoy cabbage or kale either option brings a delightful texture and earthy taste.
  • 1 cup Green onions (scallions) chopped finely, they provide a fresh, mild onion flavor.
Optional Add-ins
  • to taste Bacon or ham bits for a savory twist.
  • to taste Cheddar cheese melting some into the mix can give an indulgent finish.

Method
 

Preparation
  1. Peel and chop the potatoes into even chunks. Place them in a large pot and cover with cold water, adding a pinch of salt.
  2. Bring the pot to a boil over high heat, then reduce to a simmer. Cook for about 15-20 minutes until the potatoes are tender when pierced with a fork.
  3. Once cooked, drain the potatoes well and return them to the pot. Mash them thoroughly until smooth, adding in 4 tablespoons of butter.
  4. Finely chop the green onions and sauté them in a separate pan with a tablespoon of butter over medium heat until soft and fragrant, about 5 minutes.
  5. Gently fold the sautéed green onions into the mashed potatoes. Stir in 1 cup of warmed milk until you achieve a creamy consistency, seasoning with salt and pepper to taste.
  6. Spoon your Easy Colcannon onto plates or into bowls, making sure it’s served warm.

Notes

Top with extra melted butter for an indulgent finish.
