Preparation
- Peel and chop the potatoes into even chunks. Place them in a large pot and cover with cold water, adding a pinch of salt.
- Bring the pot to a boil over high heat, then reduce to a simmer. Cook for about 15-20 minutes until the potatoes are tender when pierced with a fork.
- Once cooked, drain the potatoes well and return them to the pot. Mash them thoroughly until smooth, adding in 4 tablespoons of butter.
- Finely chop the green onions and sauté them in a separate pan with a tablespoon of butter over medium heat until soft and fragrant, about 5 minutes.
- Gently fold the sautéed green onions into the mashed potatoes. Stir in 1 cup of warmed milk until you achieve a creamy consistency, seasoning with salt and pepper to taste.
- Spoon your Easy Colcannon onto plates or into bowls, making sure it’s served warm.
Notes
Top with extra melted butter for an indulgent finish.
