Ingredients
  

For the Chicken Marinade
  • 4 pieces Chicken thighs juicy and flavorful
  • 3 cloves Garlic fresh minced
  • 1 tablespoon Paprika smoky flavor
  • 2 tablespoons Lemon juice for brightness
  • 2 tablespoons Olive oil for marinating
For the Rice
  • 1 cup Long-grain rice fluffy variety
  • 2 cups Chicken broth for savory base
  • 1 medium Onion diced
  • 1 medium Bell pepper diced
For Seasoning & Garnish
  • to taste Salt essential for seasoning
  • to taste Pepper essential for seasoning
  • to garnish Fresh parsley or cilantro for freshness

Method
 

Preparation
  1. In a bowl, mix olive oil, smoked paprika, garlic powder, salt, and pepper. Toss your chicken thighs in this flavorful blend and let them marinate for at least 30 minutes for maximum flavor.
  2. Heat a large skillet over medium heat and add a splash of olive oil. Sauté chopped onions and bell peppers until they’re soft and fragrant, about 5 minutes.
  3. Add the marinated chicken to the skillet. Cook for about 6-8 minutes on each side until golden brown.
  4. Stir in uncooked white rice along with diced tomatoes and chicken broth. Mix everything well.
  5. Cover the skillet and let it simmer on low heat for about 20-25 minutes or until the rice is fluffy and has absorbed all the liquid.
  6. Just before serving, fold in fresh peas for a pop of color and nutrition. Let them warm through for about 3-5 minutes.

Notes

Optional: Garnish with fresh parsley or a squeeze of lemon juice for extra brightness!
