- In a bowl, mix olive oil, smoked paprika, garlic powder, salt, and pepper. Toss your chicken thighs in this flavorful blend and let them marinate for at least 30 minutes for maximum flavor.
- Heat a large skillet over medium heat and add a splash of olive oil. Sauté chopped onions and bell peppers until they’re soft and fragrant, about 5 minutes.
- Add the marinated chicken to the skillet. Cook for about 6-8 minutes on each side until golden brown.
- Stir in uncooked white rice along with diced tomatoes and chicken broth. Mix everything well.
- Cover the skillet and let it simmer on low heat for about 20-25 minutes or until the rice is fluffy and has absorbed all the liquid.
- Just before serving, fold in fresh peas for a pop of color and nutrition. Let them warm through for about 3-5 minutes.
