Ingredients
  

Cake
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1 tablespoon lemon zest
  • 1/4 cup fresh raspberries plus extra for garnish
Frosting
  • 1 cup powdered sugar
  • 1/4 cup unsalted butter softened
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined.
  6. Fold in the lemon zest and raspberries gently.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely.
Prepare the Frosting
  1. In a mixing bowl, beat the softened butter until creamy.
  2. Gradually add the powdered sugar, mixing well.
  3. Add the lemon juice and lemon zest, and beat until smooth and fluffy.
Assemble the Cake
  1. Once the cakes are completely cool, place one layer on a serving plate.
  2. Spread a layer of frosting on top of the first cake layer.
  3. Place the second cake layer on top and frost the top and sides of the cake.
  4. Garnish with additional raspberries and lemon zest if desired.

Notes

For best results, use fresh raspberries and ensure all ingredients are at room temperature before starting.
